April Fool's Day Sushi


I am not a sushi eater, and I never will be...unless it's this "sushi"!  For April Fool's Day I decided to make a faux sushi.  This is so easy, and it's surprisingly tasty.  

I got the idea from a great book my friend Christy from The Adventures of Mini-Martha got me last year for my birthday.  The book is Fun Stuff - Silly Snacks, and it's bound to become a much-used book when the baby lady gets a little older.  It's just loaded with good ideas for really cute food. 
So April Fool's everyone, and I hope you enjoy the sushi!


Ingredients:
1 bag (10.5 oz) mini marshmallows
3 T. unsalted butter
6 c. rice krispies cereal
green Fruit Roll-Ups or Fruit by the Foot
assorted fruit, diced or cut into slices - I used mangoes, strawberries and kiwi

How:
VERY IMPORTANT:  Spray a rubber spatula and a 13 x 9 baking pan with non-stick spray.  Combine marshmallows and butter in a microwave safe bowl and heat on high for 1-2 minutes, stirring once, until melted.  Pour in cereal and stir with the greased rubber spatula to combine. Pour cereal into the prepared baking pan and, using a sheet of waxed paper, press down with fingers until even.  Let sit for 10 minutes.

Cut half of he pan into 1 x 2 inch rectangles.  Cut small triangles off of each corner and round them out to make an oval shape.  Use a round cookie cutter to cut out round shapes in the other half of the baking pan.

Wrap the Roll-Ups around the circle shaped ones, and then put diced fruit in the center.  Place sliced fruit length-wise down the oval ones and wrap up with a piece of Fruit Roll-Up.

  6. Oh my gosh I cannot even begin to tell you how much I LOVE these! It reminds me of a "dessert burger" (if you will) that I saw with a round brownie for the burger and a doughnut for the bun..oh it was awesome.
    These? Totally just as awesome! Great job :)
    P.S. I canot wait to make these next time my nehpews come home they will love them!!
